• 1 large eggplant cut into long slices
• 100g soft goat’s cheese
• 4 tbsp pine nuts
• 5 dried tomatoes in oil
• handful of rocket
1. Grill the eggplant slices (without oil) on both sides or use a frying pan.
2. Roll the goat cheese with pine nuts and dried tomatoes in the eggplant slices. Season with salt and pepper.
3. Sprinkle the rolls with a little olive oil and lemon juice on all sides.
